“Chocolate Cake Roll with Raspberries”

This cake is easy to prepare and it looks great when it is done. The best part of this cake is that you can use so many different fruits. It depends on what you like or even go with the season. I preferred Raspberry this time because they are so full and delicious right now. But you can also make it with just chocolate and pistachio’s as well.

Servings : depends on the slices!

Ingredients:

3 Egg ( separated)

5-6 tbsp of warm water

3/4 cup Sugar

1 tbsp Vanilla Sugar (9gr)

1 1/2 tsp Baking Powder

1 cup +2 tbsp Flour

1 1/2 tsp Grand Marnier ( if you have it)

1 tbsp of Cocoa Powder

1/2 cup crushed chocolate ( i used one with Pistachios)

1 cup of Fresh Raspberries

1 1/2 cup Heavy Cream (whipped fresh)

1/2 cup of Powder Sugar

Step 1:

Separate Egg whites from its yolk and place the Egg whites on the mixing bowl. Mix in high speed until the egg whites becomes very stiff. After place the Egg white on a separate plate.

Step 2:

Place the egg yolks on the mixing bowl an add the warm water into the bowl and start mixing in medium speed.

Step 3:Add the sugar ( mixed in with Vanilla sugar) and mix until it becomes very creamy.

Step 4: Add the flour ( mixed in with Baking Powder) and mix in the Cocoa powder as well.

Step 5: Slowly mix the egg whites into to the bowl slowly.

Step 6: Place an aluminum foil on a flat baking tray and pour the dough into the baking tray. Bake in 350F for 10-15 min. It bakes very fast! Let it cool for 15 minutes.

Step 7:

Make a clean Kitchen towel wet and place on the counter. Place the baked dough on top of the wet towel ( aluminum foil needs to be on top), and start peeling out the foil from the baked dough.

Step 8:

Prepare the fresh Heavy Whipping Cream by mixing with powder sugar until it is stiff. Wash the berries ( or any other fruit but small pieces) and dry them as well .

Place the whipping cream on top of the dough and spread the cream over the cake equally. Place on the edge of the cake the fruits and some crushed chocolate pieces. Roll the cake first holding the end tide with the wet cloth. Start rolling by holding it tide and lightly squeezing the dough.

Step 9:

Cut the ends straight to create a more firm look. Decorate the cake as desired with cream, fruit and some chocolate. You can even put some powder sugar.
